TREACLE FUDGE
INGREDIENCE:
1/2 CUP LIGHT CREAM OR EVAPORATED MILK
3/4 CUP FIRMLY PACKED DARK BROWN SUGAR
1/4 TEASPOON SALT
4 OUNCES UNSWEETENED CHOCOLATE
2 TABLESPOONS UNSALTED BUTTER
1/3 CUP MOLASSES (NOT BLACKSTRAP)

HOW TOM MAKE IT:
1. IN A BOWL, MIX TOGETHER THE CREAM, SUGAR AN SALT.
2. IN A HEAVY SAUCEPAN, MELT THE CHOCOLATE WITH THE BUTTER.
3. REMOVE FROM THE HEAT AND STIR IN THE MOLASSES.
4. ADD THE CHOCOLATE MIXTURE TO THE CREAM MIXTURE.
5. POUR INTO A BUTTERED 8x8 SQUARE PAN.
6. LET COOL.
7. CUT INTO SQUARES AND SERVE.



  PUMPKIN JUICE
INGREDIENCE:
1 PUMPKIN
HONEY
APPLE JUICE OR MILK

HOW TO MAKE IT:
1. SLICE THE PUMPKIN IN HALF AND SCRAPE OUT THE GUTS WITH A BIG SPOON.
2. PUT BOTH HALVES OF THE PUMPKIN IN A GREASED COOKIE SHEET, CUT SIDE DOWN.
3. BAKE IT AT 350°F.
4. DEPENDING ON THE SIZE OF THE PUMPKIN, IT COULD TAKE UP TO 30 MIN. TO MAKE IT SOFT ENOUGH.
5. CHECK IT AFTER ABOUT 20 MIN. TO SEE IF IT'S SOFT ENOUGH BY STICKING IT WITH A FORK.
6. IF IT'S SOFT ENOUGH TO EAT, IT'S DONE.
7. LET IT COOL A BIT.
8. NOW GET THE PUMPKIN MEAT OUT OF THE SHELL.
9. CUT THE MEAT INTO CHUNKS AND PUT IT THROUGH A JUICER OR IF YOU DON'T HAVE A JUICER, WRAP IT IN CHEESE CLOTH AND SQUEEZ IT.
10. NOW ADD APPLE JUICE OR MILK (I PREFER APPLE JUICE) UNTIL IT LOOKS LIQUIDY ENOUGH FOR YOUR.
11. NOW ADD HONEY AND TASTE IT.
12. KEEP ADDING HONEY UNTIL IT IS SWEET ENOUGH FOR YOU. REMEMBER, YOU CAN ALWAYS ADD HONEY, BUT YOU CAN'T TAKE IT BACK OUT SO DON'T PUT IN TO MUCH

BUTTERBEER
INGREDIENCE:
ROOT BEER
BUTTER
CREAM

HOW TO MAKE IT:

1. POOR ROOT BEER IN A CUP AND BUTTER IN A SMALL BOWL.
2. PUT THE BOWL OF BUTTER IN THE MICROWAVE AND MELT IT.
3. THEN PUT THE ROOT BEER IN THE MICROWAVE, BUT NOT TO LONG BECAUSE YOU WANT IT TO BE MODERATELY WARM BUT NOT TO WARM OR IT ISN'T FIZZY AND GOOD ANYMORE.
4. POUR SOME MELTED BUTTER IN THE ROOT BEER BUT NOT TO MUCH.
5. THEN POUR SOME CREAM a(THE SAME KIND AS YOU PUT IN COFFEE) IN.
6. IT MIGHT TAKE A FEW TRIES TO MAKE THE RIGHT AMOUNTS FOR YOUR LIKING.

PUNKIN PASTIES


Preheat oven to 375º F

Thaw dough


Filling:
1 cup canned, pureed pumpkin
½ cup light brown sugar
1 teaspoon cinnamon
¼ teaspoon cloves
¼ teaspoon ginger
dash nutmeg
Combine the filling ingredients in a mixing bowl and stir well.


Pastry:
Beat one egg in a small bowl and set aside


**Pepperidge Farms makes excellent puff pastry sheets


Roll out one sheet until thin 1/16th inch and cut into 4 large circles
Using half the beaten egg, brush around the edges of each pastry circle (with a pastry brush)
Spoon equal amounts of pumpkin mixture into centers of circles. Fold circles in half to cover mixture and seal by crimping the edges.
Brush topsos pasties with remaining beaten egg.

Place on an ungreased cookie sheet.

Bake for 25 - 30 minutes in the center of the oven until golden.

Cool. May be eaten warm or cold.
